Растительные масла, благодаря содержанию полиненасыщенных и мононенасыщенных жирных кислот, а также биологически активных компонентов – фосфолипидов, фитостеринов, витаминов, представляют собой один из перспективных элементов стратегий, направленных на улучшение пищевого рациона. В рамках данного исследования проведена сравнительная оценка эффективности применения рафинированных дезодорированных растительных масел – рапсового и подсолнечного, а также масла растительного – смеси «Особое», оптимизированного по жирнокислотному составу, разработанному специалистами РУП «Научно-практический центр НАН Беларуси по продовольствию». Испытания проводились при участии добровольцев с избыточной массой тела и были направлены на изучение пищевой ценности и профилактического потенциала исследуемых растительных масел. Установлено, что включение рапсового масла в рацион питания лиц с избыточной массой тела сопровождается достоверным улучшением липидного профиля крови (снижение общего холестерина, ЛПНП и аполипопротеина B), увеличением скорости обмена веществ и уменьшением биологического возраста сосудов. Масло растительное – смесь «Особое» проявило умеренную антиатерогенную активность, тогда как подсолнечное масло не продемонстрировало значимых изменений. Полученные данные подтверждают перспективность использования рапсового масла и масложировых продуктов на его основе в рационе лиц с избыточной массой тела, особенно в рамках подходов к профилактике сердечно-сосудистых заболеваний.</p></abstract><trans-abstract xml:lang="en"><p>In light of the growing prevalence of overweight-related diseases, an urgent priority is to develop effective, evidence-based preventive nutritional strategies aimed at reducing cardiometabolic risk. Vegetable oils, rich in polyunsaturated and monounsaturated fatty acids, as well as such biologically active components as phospholipids, phytosterols, and vitamins, represent a promising component in dietary improvement programs. This study conducted a comparative evaluation of refined, deodorized rapeseed oil, sunflower oil, and an optimized vegetable-oil blend called “Osoboe,” developed by the RUE Scientific-Practical Center of the NAS of Belarus for Food. Overweighted volunteers participated in trials designed to assess the nutritional value and preventive potential of these oils. Results showed that incorporating rapeseed oil into the diets of overweighted individuals led to statistically significant improvements in blood lipid profiles (reductions in total cholesterol, LDL-cholesterol, and apolipoprotein B), increased metabolic rate, and a reduction in the biological age of blood vessels. The “Osoboe” blend exhibited moderate anti-atherogenic activity, whereas sunflower oil produced no significant changes.
