Методом ГХ/МС были идентифицированы экстрагированные ТФМЭ-методом 27 летучих компонентов, определяющие аромат продукции, при этом компонентный состав был не постоянным, а зависел от анализируемого образца. Метод ВЭЖХ/МС/ДМД использовали для идентификации водорастворимых не летучих соединений и оценки их количественного содержания, при этом были идентифицированы 2 катехина, 2 проантоцианина, 3 хлорогенных кислоты, 4 глюкозида кверцитина. Характерный для яблок флоридзин, флоретин-3-глюкозид, в хроматограммах не обнаружен, однако обнаружен другой гликозид флоретина.</p><p>Ил. 1. Табл. 2.
